ATF is Dexron III - don't use anything else. Any brand will work - I use Triple QX as its pretty cheap and works well.

Brake fluid, dot 4 is fine and compatible with all the seals - just buy the generic dot 4, it's about £7/litre. Always use fresh, and throw it away after 6 months - it doesn't keep in the bottle once it's opened as it absorbs water.

Oil - use semi-synthetic 10w40 and a zinc additive if you have a flat tappet cam.

What he says, and you can use the trans fluid for power steering too.
Lots of discussions recently about oils, but anything decent 10w40 seems to be good, high zinc content on non hydraulic cams seems to be recommended as mentioned.
