iirc the optimum temp for an engine is 88 degrees c. That would mean a stat that opens at 190f (88c) is about right, then fan's would kick in closer to the 100c mark.
On my 3rd gen, when driving normally (cruising on motorway / going on 40mph roads etc) it sits at 70c. in stop start traffic it does climb up. If it's a crawl / lot of stopping, it will get to 106c at which point the fan cuts in, then cuts out at 88c. IIRC, air flow across the radiator only starts to make an effective difference at above 20/25 mph.
Sounds like yours runs comfortably at the temps you see. I wonder if the 160f stat was fitted to cars in the hotter states, cali, texas etc? On my Clio, the temp used to get to 88 /90 and not move, regardless of traffic conditions. Fair enough it was 1.2, so fewer and smaller explosions, but it seems that the stats and fans sat close to the optimum temperature, as you would not see any variation when up to running temp.
