No spark, no fuel coming through to the injectors, but the engine turns over when you turn the key.

Is this consistent with immobiliser being activated? No fuel pump, and no spark?

If so, how do I un-immobilise my car? It's got a "chip" in the key, not sure if that's got owt to do with it.

When you put the key in the ignition a connection is made across the pill in your key. The anti theft module (VATS) reads this resistance and it it's what it's expecting, activates the disabled part of your electrical system. If it's wrong, or there is no resistance it will not activate the fuel pump or ignition. Most times the problem will lie in the ignition switch wiring

To fool the VATS into thinking that the correct key is in the ignition you can put a permanent resistor in the line.

Take the cover off the steering column so that you can access the wiring. Find the orange wire coming from the ignition switch that goes to the VATS module. Get an accurate ohm meter and measure the resistance of the 'pill in the key. Make up a resistor of the same value, cut the orange wire and solder the resistor between the wires joining them.

Ah, that might be it. Mine's worn down. Even the key itself is like a bendy little sliver of steel foil.

I also have a light on that dashboard that says IGN RESET

The car is not in my possession, I'm just relaying info passed over by my mechanic.
